Roquefort Papillon is a cheese made from raw sheep's milk. Its paste has many elongated blue cavities and intense flavour and odour. The texture is firm and smooth and can be stained with some ease. The taste is slightly salty and complex.

Papillon is one the most famous Roquefort producers since 1906. The cheese is matured in natural caves in the city of Roquefort in France.
